I have, as of late developed a habit of coming up with weird pizza recipes. A new sort of hobby if you will. So at the husband's insistance I'm going to start putting a few of our favorite flavor pairings on this here blog. Hence: "Pizza Friday". Here we go.
crust-Trader Joe's uncooked dough (amazing)
four strips proscuitto
two shallots, thinly sliced and caramelized
one handful organic arugula
-Preheat your oven to its highest setting with the pizza stone inside (ours goes to 550 degrees fahrenheit)
-slice your shallots and place them in a pan with 1 tbsp. olive oil and a pinch of salt and brown sugar. caramelize on medium low heat until soft and golden brown (about 30 minutes).
-roll out your dough with some flour until it isn't sticky and is at your desired size. Once oven in preheated take out the pizza stone and place the dough on top.
-spread a thin layer of fig jam on the crust, add the desired amount of mozzarella and proscuitto, place the stone back in the oven and cook until the crust is a golden brown (time varies based on oven- about 10 minutes)
-take your pizza out, add the caramelized shallots and arugula. serve and enjoy!
